I found this recipe while perusing one of my favorite cooking sites:
Grilled Island Chicken
Ingredients
1/3 cup vegetable oil (I used Canola)
3T freshly squeezed lemon juice (about 2-3 lemons)
1 1/2 T soy sauce
1 clove finely minced (or 1/4 t garlic powder)
1/2 t dried oregano
1/4 t each salt and pepper
4-6 chicken breasts
Directions
Combine everything except chicken in a large bag; shake well. Add chicken and shake until well coated. Refrigerate for 10 hours (3 hours minimum).
Fire up the charcoal or gas grill to medium heat and grill chicken about 6-7 on each side.
Alt #1 bake chicken at 350˚ for app 45 minutes.
Alt #2 (which is what I did..never fails, now it rains all the time) Use the George Forman grill to grill until no longer pink.
