Pork Chop Dinner


We had some much needed rain last night.  We poured 60 points out of the rain gauge this morning.  They are saying there is a chance for some more this evening.  We'll take it!


Even with the rain, it is just too hot (and humid) to cook.  I decided to pull out the crock pot and try a new recipe.


Pork Chop Dinner

Ingredients:

4 boneless pork chops
4-6 medium carrots, coursely chopped
4 medium potatoes, cubed
1 medium onion, sliced
1 envelope onion soup mix
2 cans (10.5 oz) cream of mushroom soup, undiluted
salt and pepper to taste
1 cup liquid (I used beer, but broth or water would work too)

Directions:

Place carrots and potatoes in crock pot.  Top with pork chops.  Add sliced onion, soup mix and soups.  Cover and cook on low 6-8 hours or until veggies are tender.
