Coconut Chicken
4-6 Chicken thighs
1/3 cup plain bread crumbs
1/3 cup shredded coconut
1/3 cup melted butter
salt/pepper to taste
- Preheat oven to 350˚
- Salt and Pepper the chicken
- Mix bread crumbs and coconut in a small bowl
- Roll chicken in the coconut mixture until coated
- Place chicken on lightly greased baking pan
- Bake for 50-55 minutes
- Optional: cover with foil for first half of baking to keep coconut from browning too much.
