Garlic Lime Chicken


Today, was another hot day in Texas.  89˚ at 7:30 PM.  I so hope that this summer isn't unbearable like it was last year.  We cannot handle another summer like that.

I decided to try something new today for dinner.

Garlic Lime Chicken

Ingredients:


1 cup flour
1 tsp salt
1/4 tsp pepper
1 tsp Adobo seasoning
6 boneless, skinless chicken breast cut into strips
2 T butter
2 T olive oil
1 head of garlic, chopped
green onions
lime
cilantro
lemon pepper to taste

Instructions:

Mix flour, salt, pepper and Adobo in resealable plastic bag. Place chicken strips in and shake to coat.  Set aside

Melt butter in large pan then add the EVOO; I don't actually measure my olive oil; I'm more of a drizzler. Heat until oil glistens.  Add garlic and onion; saute until golden.  Saute chicken for about 10-15 minutes or until juices run clear.

I place the chicken in the oven at 325˚ on a foil-lined cookie sheet between batches.  

Squeeze lime over chicken and sprinkle with lemon pepper. Garnish with cilantro.

I served it with mashed potatoes and sauteed squash.  It was good.
