Coconut Chicken

This is a recipe that I found on the web somewhere.  We had this Tuesday night, and it was a big hit,
even with the 4 year old. :)

Coconut Chicken

4-6 Chicken thighs
1/3 cup plain bread crumbs
1/3 cup shredded coconut
1/3 cup melted butter
salt/pepper to taste

  1. Preheat oven to 350˚
  2. Salt and Pepper the chicken
  3. Mix bread crumbs and coconut in a small bowl
  4. Roll chicken in the coconut mixture until coated
  5. Place chicken on lightly greased baking pan
  6. Bake for 50-55 minutes
  7. Optional: cover with foil for first half of baking to keep coconut from browning too much.
